Banana nut muffins
Need a quick dessert? These homemade muffins are sure to hit the spot. Low in sugar and gluten-free, they’re packed with energy-boosting nuts and fruit.

- Ingredients:
- Gluten-free oats
- 2 teaspoons of baking soda
- ½ teaspoon sea salt
- ½ tablespoon cinnamon
- 2 eggs
- 2 tablespoons honey
- 2 ripe bananas
- 1 medium apple
- 1 cup chopped walnuts
- Instructions:
- Pre-heat the oven to 400 degrees. Prepare a cupcake tray with muffin liners. Grate the apple and set aside. Use a food processor to grind ⅓ cup oats into flour, and then mix in a bowl with the baking powder, baking soda, salt, cinnamon and ½ cup of unground oats. In a separate bowl, mash the bananas, adding the eggs and honey to the mixture. Combine the dry and wet mixtures in one bowl, and mix in the grated apples and chopped walnuts. Pour into muffin liners and bake for about 20 minutes.
